- 4 large eggs or 5 smaller ones
- 1 cup granulated sugar
- 1 tablespoon lemon zest (from about 2 lemons, preferably organic)
- 1/2 cup fresh lemon juice (from about 4 lemons)
- 1/2 cup unsalted butter, cut into cubes
Step-by-step instructions
- In a heatproof bowl, whisk together the eggs and sugar until well combined.
- Stir in the lemon zest and lemon juice until the mixture is smooth.
- Place the bowl over a pot of simmering water (double boiler). Make sure the bottom of the bowl does not touch the water.
- Add the cubed butter to the bowl and stir continuously until the mixture thickens. It usually takes about 10 to 15 minutes.
- If you want a completely smooth texture, you can pass the lemon curd through a fine sieve to remove all bits of lemon zest and any small lumps.
- Remove the bowl from the double boiler and allow the lemon curd to cool to room temperature. It will continue to thicken as it cools.
- Put the finished lemon curd in a glass or an airtight container. Refrigerate for at least a few hours or overnight until chilled and set.
Use the finished, cooled lemon curd as a topping or decoration for your cheesecake or for any other cake where this lemon curd can be used.
