  • 1/2 cup fresh lemon juice (from about 4 lemons)
  • 1/2 cup unsalted butter, cut into cubes

Step-by-step instructions

Step 1

  • In a heatproof bowl, whisk together the eggs and sugar until well combined.

Step 2

  • Stir in the lemon zest and lemon juice until the mixture is smooth.

Step 3

  • Place the bowl over a pot of simmering water (double boiler). Make sure the bottom of the bowl does not touch the water.

  • Add the cubed butter to the bowl and stir continuously until the mixture thickens. It usually takes about 10 to 15 minutes.
